Brendan Collins is Executive Chef and Proprietor at Waterloo & City, a traditional English gastropub located in Culver City, California. The concept behind Waterloo & City is consistent with Collins' upbringing as well as his culinary philosophy of making basic food into great food. Having grown up in pubs, he has a deep appreciation for the relaxed, homelike pub atmosphere, but, as a chef, he also seeks to integrate an extraordinary gastronomic experience into that atmosphere. Waterloo & City is celebrated for its house-made charcuterie offerings, including various terrines, mousses, and cured meats, as well as for serving up unique and delectable internationally-inspired dishes such as Indian butter chicken pizza, and, of course, Collins' refined renditions of British classics like English pea soup and beef Wellington.
The teams behind Hotel Erwin and Waterloo & City have collaborated to create Larry's, a casual spot with food and drink that captures the creative energy of its historic location near the Venice Beach Boardwalk. An homage to local artist Larry Bell, a pioneer of the California minimalism movement, Larry's serves up a menu of polished pub classics, pizzas with premium toppings, and daily specials all designed by Executive Chef Brendan Collins, accompanied by a selection of 26 draft beers, 20 bottled beers, specialty cocktails, and wines from around the world.
Set to open in Summer 2014, Brouwerij West will occupy a converted WWII-era warehouse in San Pedro. The space will house the three-year-old brewing operation, with the addition of an eatery managed by chef Brendan Collins and Carolos Tomazos of Waterloo & City in Culver City and Larry's in Venice. The restaurant will encompass one-third of the warehouse space, and will serve an extraordinary menu of high-quality food, on par with Waterloo & City, to complement a drink selection including all of Brouwerij West's beers, a selection of rotating guest beers, and a curated selection of wines. Visitors will be able to tour the brewing facility up-close, and enjoy beer and food indoors with a view of the working production brewery, or outdoors on either loading docks-turned-patios or the property's expansive courtyard.
